So tonite is one of my Board meetings and I thought that I would make eveyone a treat....Smokey Chocolate Truffles....
I love the taste of Chocolate and Bacon... People where I live are NOT so into that... They think it is a litttle weird (I live in kind of a hokey place-Golden Corral is crowded every day of the week!) However, there are a few people that know and LOVE Fine chocolate, and fun taste combinations, and some of them are coming to this meeting, so I am going to try these out on them.. :)
I used a combination of Valrhona Chocolates, the Coeur de Guanaja and the Alpaca (does any chocolate melt more beautifully than Valrhona???) a bit of bacon fat instead of butter and heavy cream.
The result was a thick, glossy, ganache to roll into truffles... which I did, then dusted in a bit of cocoa powder and cinamon... and put a couple of Valrhona Chocolate Pearls on the top for fun... (yes the pearls are good to eat with milk in the morning for cereal-Got that tip from Sam at Caputo's!)
I just got my invitation to next years Chocolate Festival and it will be at Hamilton's Restaurant which makes me think the judging and staffing may be different and not as swayed....thoughts are coming together now....Last year we raised ove $21,000 for planned parenthood, in that venue I bet we can DOUBLE that amount! Woo Hoo!
